Production technology of marinated beef in soft packaging sauce

The sauce-broiled beef product is a traditional flavored meat product in China. Due to its high lean meat content, rich nutrition, and delicious taste, it has been well received by consumers. However, traditional beef products are generally sold in bulk. The shelf life is too short and the circulation is inconvenient. To facilitate consumption, many manufacturers currently pack and marinate beef products for sterilization. The shelf life of such products is greatly extended, which also facilitates circulation. Here is a description of the processing technology of soft-packed beef:

First, the process of raw material selection and trimming → brine injection → cooking → bagging → second sterilization → finished product

Second, the formula (in 120 kg of water)
180g of cinnamon, 120g of galangal, 200g of pepper, 120g of nutmeg, 280g of alpinum, 100g of Bib, 45g of clove, 220g of grass, 90g of white peony, 220g of Fennel, 300g of dried orange, 180g of geraniol, 400g of fresh ginger, Tianbo fragrance E2006350g, 2098310g.

Third, the processing technology
1. Raw meat selection and dressing. Use fresh and frozen beef that has passed the hygiene inspection, and then trim and remove impurities, dirt, etc. The beef will be cut into 15cm wide, 10cm wide and 8cm thick. 3 ~ 0.5kg, standby.
2. Aromatic water brewing. The spices in the above recipe are wrapped in gauze, placed in hot water at 90°C-95°C for about one and a half hours, and used as spare. The other part is cooled to below 40°C and put into a cold storage at 0°C-4°C for use.
3. Salt water configuration, injection, tumbling. Quantitative salt, monosodium glutamate, carrageenan, phosphate, nitrous acid, injectable soy protein, beef essence, etc. are dissolved in water at a temperature of 0°C to 4°C in order, requiring a uniform injection state, no agglomerate precipitation, and injection temperature. It is 4°C to 6°C. Then the whole piece of beef was injected with an injection rate of 25% to 30%. The injected beef was placed in a tumbler and tumbling was performed for 10 to 20 minutes for 12 hours at an ambient temperature of 0°C to 6°C.
4. Cooked. The boiling water in the cooking pot is heated and boiled, and the kneaded beef is added to cook. The spices in the pot are required to submerge the beef to a moderate degree. The mixture is boiled for about 30 minutes and then gently cooked and kept in a slightly boiling state. For ~50 minutes, during the cooking period, it is required to stir from time to time and to remove floating foam on the surface of the soup. Cook until the center of the beef is bloodless.
5. Water control, inspection bagging. After removing the beef, a thin layer of carrageenan can be sprinkled on the outside of the meat, then the cooked product can be weighed and packaged in an aluminum foil bag, sealed with a vacuum sealer, and the degree of vacuum is 0.1 Mpa. The heat sealing time is 20 to 30 minutes. second.
6. Sterilization. The use of high-temperature sterilization pot, insulation pressure is 0.25 ~ 0.3MPa, the temperature is 121 °C, cooling back pressure drop, the sterilization time with the size of the product specifications. The pan temperature requirement drops below 40°C before it can be panned.
7. Secondary packaging and finished products. After the product is out of the pot, wipe off the water, ash, etc. on the outer package, set it to a constant temperature test at room temperature for a week or so, remove the baggage that has leaked from the bag, and then put it into the outer bag, seal it, and pack it into the storage.
