4. Sulfur treatment: The salted fruit pieces shall be immersed in a 0.3% sodium sulfite solution, immersed in a translucent form, removed by rinsing, drained and placed in boiling water and boiled for 3-5 minutes.

5. Add 45% sugar solution, 0.2% citric acid to the sugar boiler, heat and boil, put in fruit pieces, boil for 5 minutes, add 45% cold sugar liquid (the amount of fruit weight is 10 %), boil for another 5 minutes, and repeat this 3-4 times until the fruit becomes soft. Then add white sugar in 5 batches. Add sugar in the first 1-3 times and add a small amount of cold sugar. Add only sugar in the 4th time. Add sugar every 5-10 minutes. After the 6th sugar, continue to cook until sugar. When the concentration of the liquid reaches above 65%, stop the fire and pan out the pot, pour the fruit pieces together with the sugar liquid into the cylinder, dip for 24 hours, drain the sugar liquid, and bake.

6. After drying and draining the sugar liquid, spread the fruit pieces on the baking tray and send them to the drying room. Bake at 60-70°C until the surface of the hand touches the fruit pieces. The surface is not sticky, slightly elastic, brownish brown. degree.
