I've always believed in fueling my kids' growing bodies with nutritious meals to keep them energized throughout the day. This year, the "Fresh Box" lunch concept was created (which we occasionally shared on Instagram using the hashtag #freshmommyfreshbox). But now that summer's approaching, I can't just let everything we did during the school year stay on the sidelines. While I'm definitely looking forward to more laid-back days ahead, I know I'll still be packing snacks for playdates and park visits, and making sure my little ones eat healthy lunches even when school's out.
As moms, we've all been there—feeling like preparing the healthiest meals for our kids is a lot of work. And yes, sometimes it can be. But often, it's just about thinking creatively, stepping outside the usual lunchbox routine, and letting our imagination flow. Healthy eating doesn't have to be complicated—it can be as simple as using up the last few items in your fridge before your next grocery trip.
Today, I want to share some simple tips for creating fun and healthy lunches or snacks for your kids. These ideas work perfectly for the school year and will come in handy during the summer months when you're staring into the fridge wondering what to feed your kids next.
First, think beyond the traditional bread. Sandwiches can be reinvented without bread. Slice apples horizontally (after removing the core) and use them to hold peanut butter and raisins or add a slice of cheddar. Whole wheat tortillas can be rolled up with cream cheese and cucumber slices, or a peanut butter and banana combo. Even round cucumber slices can make for a fun "sandwich." Another favorite of ours is using waffles as bread for a PB&J. Next time you're whipping up pancakes or waffles, consider making a few extras to use later.
Second, take inspiration from prepackaged foods. My kids have always loved Lunchables, particularly the pizza variety. Since they don’t get them often, I decided to create my own version. I bought a jar of pizza sauce with clean ingredients, froze it in an ice cube tray, and when it was time for lunch, I'd pop out two cubes, pack shredded mozzarella cheese, pita bread cut into triangles, and sometimes turkey pepperoni. My daughter loved her homemade "lunchable," and my son requested it for lunch every day for a week!
Third, make it interactive. Kids love doing things themselves. Pack a small bowl of yogurt with toppings like granola, raisins, or frozen berries for a DIY parfait. Hummus is a fantastic protein-packed dip that pairs well with almost anything—vegetables, pita bread, or chips. If your child is reluctant to eat veggies, let them play with their food by arranging ingredients on a plate and building something like a city or a house. Seeing their creation might just encourage them to try something new.
Fourth, reduce processed sugar. Instead of adding sugary drinks, ensure your kids have reusable water bottles filled with flavored water. Adding frozen berries not only keeps the water cool but also provides a tasty treat. Occasionally, I’ll throw in a packet of Emergen-C for a vitamin boost. Experiment with different combinations like mint and strawberries, or orange and cucumber slices. Watermelon and mint is another refreshing summer twist.
Lastly, present meals in fun containers. Serve meals in a mini muffin tin or use mason jars. Kids love surprises, and unique presentations can make meals more exciting.
