Processing of celery paper

Raw materials: The quality of the products depends on the color of the raw materials. Therefore, good raw materials should be selected. Cleaning and slicing: Place the celery leaves in the washing tank, wash them with clean water, remove and drain the water. Wash the celery leaves and cut them into pieces of about 1 cm. The purpose of segmentation is to increase its surface area for processing in the next step. Blanching: Divide the celery into a boiling pot and blanch it for 0.5-1 minute until it is soft and free from discoloration. Immediately afterwards, dip with cold water to prevent the continued effect of residual heat. Crushing: The celery leaves that are drained are beaten with a beater. The speed of the beater is 1500 rpm. The purpose of crushing is to have a flat surface when the blade is scraped. At the same time, the gas between tissue cells is removed, which is favorable for the formation of celery paper. Mixing: In the pulped raw materials, add the thickening stabilizer and mix. The thickening stabilizer can use 0.6% sodium alginate and 9% starch. When used, the thickener is first melted with warm water. Scraper: The paste is scraped on the tempered glass with a scraper. The thickness is 0.5 cm. It should not be too thin or too thick, otherwise it will cause the finished product to harden or crack when exposed. Baking: The scraped tablets are sent to a drying room and baked at 60-70°C for 4-5 hours. During the baking process, it is necessary to pay attention to timely venting and draining of water to facilitate drying. Seasoning and drying: Spray it on celery paper with delicious spices (which can also be prepared by oneself) and bake it in the baking room for a while. When the finished product is slightly hard, you can take it out and put it in a cool place.
