Mango puree is made similar to mango sauce, except that the pulp is finer. The puree product is required to be in a thick state, and the soluble solid content is 65% to 68%, and has the inherent color and aroma of the mango.
If a small amount of cinnamon, cloves and other spices are added to the mango puree, the flavor and aroma of the product can be enhanced. The amount of each perfume is about 0.1% by weight of the raw material. Flavors (grinded into powder) should be added near the end of cooking, not too early, so as to avoid loss of aromatic components.
In addition, a certain amount of other fruit pulp (juice) is added to the mango puree to make a mixed fruit puree. The product should be able to highlight the flavor of mango, so when choosing the type of fruit and its blending amount, the flavor coordination of the mixed puree should be considered.
